Behind Banksia Confectionery

 

Banksia Confectionery is all about flavour and style, we produce cakes, cookies and chocolates that present bold flavours with a curated appearance. Every item sold in the store has a story behind it’s inception, whether that’s a person, mood, time or place. All cakes are decorated individually and with seasonal flair, you will never get the same decoration twice.

All our products are made with French butter, local Dutch flour and free range eggs.

About the owner

Banksia Confectionery is owned and operated by Australian pastry chef Nyssa Smith.

Nyssa attended culinary school in her hometown of Brisbane, Australia as part of a career change in her 30s. Since getting her start with small businesses in Brisbane, Nyssa spent over 2 years serving as sous chef with 31 Degrees Custom Chocolates. Following this a move to London, UK opened the doors for a wider and more varied experience.

While in London, Nyssa worked with both small and large companies including Rococo Chocolates, Landmark Hotel, Sea Containers Hotel and Bread Ahead Bakery School just to name a few. It was during this time that the idea behind Banksia Confectionery was born.
